The functional diet looks at how food interacts with the metabolism; functional cooking brings it to the table every day. Together with Dr Sara Farnetti, an expert in functional nutrition and longevity, we have produced three videos that show how to turn simple dishes into instruments of health, with polyphenol-rich extra virgin olive oil at the centre.

Eating pasta at dinner helps you sleep better. It sounds like the opposite of everything we have been taught, and yet it is one of the principles of the functional diet. It is not about counting calories or going without, but about understanding how each food speaks to our body.

This is the philosophy we share with Dr Sara Farnetti, with whom we have produced a series of videos dedicated to functional cooking. Two simple recipes, a conversation about oil, and one clear idea: food, chosen and cooked well, is the first act of daily care. And quality extra virgin olive oil plays the leading role.

What Is the Functional Diet?

The functional diet is a nutritional approach that focuses not on calories, but on how foods interact with the metabolism and the organs. The goal is balance: choosing and combining foods according to their function, so that every meal becomes an instrument of wellbeing and prevention.

In the functional diet, food is information. Every food, once eaten, sends signals to the liver, the gut, the brain. Quality matters, not just quantity. As Dr Sara Farnetti often says, “too much amounts to too little“: the body seeks balance, and it is in balance that true health is achieved. It is a method different from diet understood as deprivation, and different too from the Mediterranean diet, the dietary model of our own region, because it starts from the workings of the individual organism.

And Functional Cooking?

Functional cooking is the daily practice of the functional diet. It means that how you cook matters, not just what you bring to the table. The same raw ingredient, treated with different techniques, can change its effect on blood sugar, on digestion, and even on sleep.

This is where theory becomes concrete action. Cooking pasta al dente, cooling rice, finishing a dish raw with a good oil: small choices that change the function of a plate. With Dr Sara Farnetti, we wanted to show this through two videos, where each recipe is also a small lesson in health.

Who Is Sara Farnetti, and Why Does She Work with Frantoio Muraglia

Dr Sara Farnetti is an expert in functional nutrition and has worked for years in the fields of prevention and longevity. She studies the metabolism and the impact of foods on the body, building personalised programmes. “For years I have worked in prevention and healthy longevity, and that is why I talk about oil,” she explains. “But not all oil is the same: only a high-quality extra virgin olive oil truly allows us to gain health.”

This is precisely where our paths meet. Her idea of the daily care of the body resembles our daily care of the land and the olive trees. For five generations we have harvested our olives early to capture the maximum of polyphenols, because we believe that a great oil is born from respect for the plant. Two different crafts, the same attention to quality and balance.

Wholewheat Spaghetti at Dinner: The Carbohydrates That Help You Sleep

A plate of wholewheat spaghetti at dinner can promote rest. Complex carbohydrates help tryptophan reach the brain, where it becomes serotonin and then melatonin, the sleep hormone. Chosen wholewheat and slow-dried, they are more filling and keep blood sugar under control.

This is no heresy, but a mechanism explained even in medical literature: according to Humanitas, carbohydrates at dinner help tryptophan reach the brain, where it is transformed into serotonin and melatonin. Dr Sara Farnetti’s recipe is simple: wholewheat spaghetti al dente, cherry tomatoes, basil, and extra virgin olive oil warmed in the pan. Thanks to its high polyphenol content, our intense fruity oil also has a high smoke point, so it holds up well to cooking the tomatoes. The final emulsion binds everything together and brings the dish into harmony with the liver’s nocturnal work.

The Trick to Lowering the Glycaemic Index of Rice

Boiling rice al dente and cooling it under water lowers its glycaemic index. The cooling transforms part of the starch into resistant starch, which behaves like a fibre and slows the absorption of sugars. The result is more stable energy and more balanced blood sugar.

It is a documented effect. Through cooking and subsequent cooling, part of the starch undergoes retrogradation and becomes resistant starch, reducing the glycaemic response of the rice. In the video, Dr Sara Farnetti combines the rice with courgettes and courgette flowers, then finishes it raw with a drizzle of our high-polyphenol oil. A simple dish that becomes functional thanks to two gestures: the cooking technique and the quality of the seasoning.

📹 Video 2, “The Trick to Lowering the Glycemic Index of Rice: A Functional Recipe by Dr. Sara Farnetti.”

Why a Bitter, Peppery Oil Is Healthier

The bitterness and the peppery kick of an extra virgin olive oil are not flaws, but the signal of polyphenols. The more bitter an oil is and the more it stings the throat, the richer it is in these antioxidant substances. It is they that make oil a truly functional food.

In the third video, Dr Farnetti and Savino Muraglia discuss precisely this. “The peppery and bitter notes are the sensory experience of health,” Sara Farnetti explains. Those compounds, such as oleocanthal, have a recognised anti-inflammatory action, and the polyphenols in olive oil help protect blood lipids from oxidative stress — a benefit validated at European level. To explore the subject further, it is worth reading our guide to the polyphenols in olive oil. The secret, Savino explains, is the early harvest: “It is in the unripe fruit that the treasure hides — the explosion of polyphenols.”

📹 Video 3, “Why Is a Bitter and Pungent Extra Virgin Olive Oil Healthier? Sara Farnetti and Savino Muraglia Explain.”

Oil, the Functional Food par Excellence

This is the thread that unites the three videos. Quality extra virgin olive oil is not a mere condiment, but a living nutrient that interacts with the whole body. “Oil is the functional food par excellence, because it is in constant dialogue with all of our organs,” says Dr Sara Farnetti. Liver, gut, brain, metabolism: every drizzle of raw oil is a small act of prevention.

To bring functional cooking to your table, you need an oil that is truly rich in polyphenols. Our intense fruity single-cultivar Coratina is made for exactly this: olives harvested early, cold-milled, with that gentle sting that is the signature of health. Try it raw, over a legume soup or a plate of rice, and you will taste the difference. Because, as Dr Sara Farnetti teaches us, wellbeing is not a duty — it is an art.

Have you ever stood in front of the olive oil shelf, puzzled by the price gap between a €5 bottle and one that costs €25? It’s a fair question—one that deserves an honest and transparent answer. When we talk about food, we often see the price as just a number, forgetting that behind that number there is a story, a method, and above all, an ethical choice.

At Frantoio Muraglia, we believe extra virgin olive oil is not just a simple condiment—a “fat” used to keep food from sticking to the pan. For us, it is a star ingredient, an elixir of life, and a piece of our Apulian heritage. But to truly understand why our oil carries a different value than industrial oils, we need to take a journey together—from the sun-drenched olive groves of Puglia all the way to your table.

Are you ready to discover what’s really inside your bottle?

The Misleading Comfort of the “Extra Virgin” Label

Let’s begin with an uncomfortable truth: not all olive oils labeled “extra virgin” are the same. Legally, an oil can be called extra virgin if it meets certain minimum chemical standards. But those standards reveal nothing about the freshness of the olives, their precise origin, or the care with which they were handled.

The low-priced oils commonly found in large supermarkets may come from blends of oils sourced from different EU and non-EU countries and produced on an industrial scale. The goal in these cases is consistency and high volume, which often results in a product with a more standardized sensory profile. For those seeking character, identity, and a genuine connection to a place, smaller, traceable, artisanal productions offer a very different experience.

Artisanal olive oil, by contrast, is alive.
When you taste our Monocultivar Coratina or Peranzana, you’re not simply tasting “oil.” You’ll notice hints of artichoke, arugula, pepper, and hay. You’re tasting the land itself. Achieving this harmony of flavors requires sacrifices that industrial production simply isn’t designed to make.

The Mathematics of Quality: Lower Yield, Greater Benefits

Here is the factor that most directly influences the price: yield.

Per ottenere un olio ricco di polifenoli (i potenti antiossidanti che fanno bene al cuore e che “pizzicano” in gola), noi raccogliamo le olive in anticipo, quando sono ancora verdi e aggrappate all’albero.

What does this mean in practical terms?

Early Harvest
Green olives produce far less oil. From 100 kilograms of olives, we obtain significantly less oil than producers who wait until the fruit is black, overripe, and full of water. We sacrifice quantity in order to achieve excellence.

Immediate Milling
Our olives never sit around. They are pressed within a few hours of harvest in our own mill. This prevents oxidation and preserves their aromas intact. Industrial production often processes olives that have traveled for days before being crushed.

Beauty with a Purpose: Why Our Ceramic Jars Are More Than Aesthetic

Extra virgin olive oil has three main enemies: light, heat, and oxygen.

Our ceramic jars are not simply decorative. They act as a vault for flavor. Ceramic—an ancient, natural material—protects oil from light (which accelerates aging) and shields it from temperature fluctuations far better than clear glass.

When you purchase one of our jars, you’re bringing home an object that combines the region’s ceramic craftsmanship with the best possible protection for the oil itself. It’s local knowledge applied to everyday life: a product rooted in tradition but designed for modern needs of preservation and style.

What Is Your Health Worth? A Real Calculation

Let’s look at it practically.

A 500 ml bottle of extra virgin olive oil typically lasts about a month in a household that pays attention to its diet.

If you divide the price difference between industrial oil and artisanal oil over the days of a month, the result is only a few extra cents per day.

Does it make sense to spend €20 or €30 on fresh fish or a high-quality steak, only to spoil it with a poor-quality oil that masks the flavor—or worse, adds no nutritional value at all?

A great extra virgin olive oil is not a cost—it’s an ingredient. Just a drizzle is enough, far less than with commercial oils, to elevate a simple dish such as bruschetta, a vegetable soup, or a salad. It’s an investment in everyday pleasure and long-term well-being.

A Pact of Trust

We have no secrets. The fifth generation of our family continues to work with the same obsession: bringing an experience to your table, not a commodity.

Choosing Frantoio Muraglia means stopping the habit of simply buying “oil” and starting to choose a philosophy of flavor. It means supporting agriculture that respects the rhythms of nature and the work of people.

If you’re curious to see whether the difference can truly be tasted—and it can—the best way is to put your senses to the test. Don’t take our word for it. Trust your palate.

Are you ready to transform your dishes?Siete pronti a dare una svolta ai vostri piatti?

Iniziate dal nostro percorso di degustazione. Scoprite come un vero extravergine pugliese può trasformare la vostra cucina.

Every day, in Mediterranean kitchens, a small ritual takes place — one that embodies balance and health: a drizzle of extra virgin olive oil on bread, vegetables, or a plate of pasta.
A simple, ancient gesture that goes beyond flavor. It’s a gentle touch for our immune system — a kind of biological education that begins with taste.

Because extra virgin olive oil doesn’t just stimulate the immune defenses — it guides them. It helps them recognize, regulate, and respond intelligently. It teaches moderation — how to react without overreacting, how to defend without inflammation.

The Gut: The Training Ground of Immunity

It all begins there, in the gut, home to our microbiota — a dense community of microorganisms constantly communicating with the immune system.
A healthy microbiota is like a well-tended garden: it keeps defenses strong and the intestinal barrier intact.
Thanks to its polyphenols, extra virgin olive oil encourages the growth of “good bacteria,” supporting a balanced microbiota and reducing the low-grade inflammation that undermines immune efficiency.

The result is a kind of daily training for our defenses: the body learns to respond promptly, yet without wasting energy on unnecessary inflammation.

Polyphenols and Oleic Acid: The Winning Team

Inside a quality extra virgin olive oil are dozens of bioactive compounds.
Among them, polyphenols — such as hydroxytyrosol and oleuropein — are the quiet heroes: natural antioxidants that protect immune cells from free radicals and strengthen their defensive capacity.

Working alongside them is oleic acid, the “good” fat that defines extra virgin olive oil. It reduces inflammation, improves the health of cell membranes, and helps immune cells stay flexible and responsive.

Together, polyphenols and oleic acid don’t artificially boost immunity — they teach the body to respond better, with balance and natural intelligence.

A Dinner that Trains (and Educates) the Immune System

Just a drizzle of oil at the right moment can turn a meal into balance, the table into prevention, and dinner into a small lesson in health.

Extra virgin olive oil proves that wellbeing isn’t born from restriction, but from the culture of mindful, everyday gestures.
Each time its green, fruity aroma meets the warmth of a dish, something more than seasoning happens — it becomes an act of care.
Here’s a simple, complete evening menu “to train the immune system,” where every course teaches the body through flavor.

Appetizer
Crudités of carrots, fennel, and celery with extra virgin olive oil and a pinch of sea salt.
A crisp, vegetable start that supports the microbiota and prepares digestion.

Main Course
Slow-dried wheat pasta tossed with Tuscan kale sautéed in garlic, chili, and extra virgin olive oil.
Cruciferous vegetables provide detoxifying sulfur compounds, while the oil contributes polyphenols that protect immune cells.

Extra virgin olive oil is a silent teacher — even for the immune system.
It doesn’t push or force; it teaches the body to defend itself wisely, to find the balance between reaction and calm, energy and protection.

It’s an ancient yet ever-relevant formula — the essence of Mediterranean biology, where wellbeing is never excess, but harmony.
A drizzle of olive oil each day is more than flavor — it’s culture. The culture of health that begins with taste.

In Mediterranean culture, extra-virgin olive oil (EVOO) has never been just a condiment: it’s a functional food that benefits the heart, the blood vessels and — increasingly clearly — the brain.

That peppery throat-tingle that signals the presence of oleocanthal is a mark of its power. This polyphenol works as a natural anti-inflammatory, helps clear beta-amyloid and tau protein (the hallmarks of Alzheimer’s), and protects neurons from oxidative stress.

The brain and “type 3 diabetes”

An increasing number of studies describe Alzheimer’s as a form of “type 3 diabetes,” in which insulin signaling in the brain is impaired. EVOO improves insulin sensitivity, lowering the risk of neurodegeneration and protecting the circuits of memory.

A healthy liver acts as a valuable filter: it helps remove toxic metals (lead, cadmium, mercury) that damage nerve cells. EVOO, thanks to its bioactive compounds, supports liver function and lightens the load on the brain.

Neuronal health also begins in the gut — often called the body’s “first brain.” High-quality EVOO strengthens the intestinal barrier, nourishes the microbiota and supports the brain’s production of serotonin from tryptophan, the neurotransmitter of well-being. When the gut is balanced and healthy, the mind is clearer and more stable.

High-quality EVOO & the Brain — 5 reasons to choose it every day

Neuroprotection: Oleocanthal reduces inflammation, beta-amyloid and tau: less risk of Alzheimer’s disease.

Against “type 3 diabetes”: improves brain insulin sensitivity and supports memory and cognitive function.

Liver in the forefront: Supports detoxification by removing toxic metals harmful to neurons.

Gut, the first brain: strengthens the intestinal barrier, nourishes the microbiota, and promotes serotonin metabolism.

Tradition and science united: 20-30 g per day, from early harvest and rich in polyphenols: bitter and spicy are the true signature of health.

EVOO is the golden thread that links tradition and modern research: it preserves the memory of flavors and helps protect the memory of the brain. An ancient, everyday gesture that becomes an act of prevention and functional nutrition.

A brain-boosting lunch invitation

Brain-healthy aperitif

Crudités drizzled with raw EVOO
Rich in oleocanthal, polyphenols and oleic acid to reduce inflammation and oxidative stress.

Starter

Raw leafy greens (spinach, kale)
High in folate and vitamin K, important for memory.

1 avocado
Monounsaturated fats for the brain and insulin metabolism.

A final drizzle of raw EVOO
The finishing touch for flavor and neuroprotection.

With summer’s arrival, our skin comes out into the open, the sun caresses us, and the desire to feel lighter, more energized, and radiant grows. But between a day at the beach and a dinner outdoors, it’s important not to forget what truly makes a difference: nourishing the body from within.

One of the most valuable ingredients for glowing skin and strong bones is none other than high-quality extra virgin olive oil. A true natural ally that deserves a place on your table every day—especially during the warmest months.

Natural Glow? It Starts with the Right Vitamins

In summer, our skin is exposed to the elements: sun, wind, and salt air. To keep it radiant and protected, it’s essential to ensure a good intake of vitamins A, D, and E. These vitamins are fat-soluble, meaning they need a fat source to be effectively absorbed by the body.

This is where extra virgin olive oil steps in:

It enhances the absorption of vitamin A, boosts your tan, and protects the skin.

It supports the action and bioavailability of vitamin D, which plays a key role in bone metabolism.

It is naturally rich in vitamin E, a powerful anti-aging antioxidant.

And that’s not all. Thanks to its phenolic compounds, essential fatty acids, and squalene, extra virgin olive oil fights skin aging, maintains elasticity, and contributes to that much-desired natural glow.

Strong Bones, Even on Vacation

Summer also means more sun exposure, which stimulates vitamin D synthesis in the skin. To fully benefit from this vitamin, you need a diet that not only aids absorption (especially when vitamin D comes from food rather than sunlight) but also amplifies its effects.

Thanks to its polyphenols (such as oleuropein and hydroxytyrosol) and anti-inflammatory properties, extra virgin olive oil improves the absorption of calcium and magnesium, enhances the action of vitamin K2 (which helps “lock” calcium into the bones), and protects bone cells.

The result?

Stronger bones

Fewer cramps and less muscle fatigue

Long-term prevention of osteoporosi

A Practical Summer Tip

Choose high-quality extra virgin olive oil every single day. Just 2–3 tablespoons are enough to deliver real benefits.

Pair it with smart summer dishes, such as:

Arugula with marinated anchovies in extra virgin olive oil

Zucchini flower omelet with extra virgin olive oil

Fresh salads with basil, parmesan shavings, and extra virgin olive oil

Vegetable crudités with extra virgin olive oil and aromatic herbs

Beauty doesn’t start with cosmetics—it starts at the table, with the quality of your ingredients and the ability to listen to what your body truly needs. With extra virgin olive oil, you’re serving health, energy, and natural beauty: radiant skin, strong bones, and overall well-being.

Why Extra Virgin Olive Oil is a Metabolic Ally

In the world of low-calorie diets, fats are often unfairly vilified. Extra virgin olive oil (EVOO), in particular, is commonly misunderstood—reduced to a high-calorie condiment to be limited or even avoided to maintain a healthy weight.

But EVOO doesn’t just not make you fat—it actively supports your metabolism and overall health.

This is a fat that interacts with human physiology, not just caloric intake. EVOO functions as a true metabolic modulator: it influences hunger, the glycemic load of a meal, liver activity, and nutrient absorption. It shouldn’t be evaluated purely in terms of calories, but in terms of function. Ask yourself: “How does what I eat actually work in my body?”

Appetite Control and Blood Sugar Balance

When added to meals, EVOO slows down gastric emptying. This leads to a more gradual release of sugar into the bloodstream and a slower insulin response. The result? Longer-lasting satiety and a reduced likelihood of rebound hunger caused by blood sugar spikes.

For example, pasta dressed with EVOO has a lower glycemic impact than the same portion served plain. Blood sugar rises more gradually and stays more stable—especially if the pasta is cooked al dente and finished in a pan with EVOO. This effect is measurable and meaningful for anyone seeking a balanced diet, especially with an eye toward preventing metabolic disorders.

Supporting Digestion and Liver Function

EVOO stimulates the liver and gallbladder, promoting bile production and flow. This is key not only for digesting fats but also for eliminating unwanted substances like cholesterol, hormonal metabolites, and drug residues. Bile is one of the body’s main routes for toxin elimination through the gut.

Enhanced Absorption of Vitamins

EVOO improves the absorption of fat-soluble vitamins (A, D, E, K), all of which are essential for numerous bodily functions—from immune support and bone health to antioxidant activity and hormone regulation.

Cholesterol Benefits

Multiple studies have shown that regular consumption of extra virgin olive oil is associated with lower levels of LDL (the “bad” cholesterol) and better maintenance of HDL (the “good” cholesterol), promoting a healthier lipid profile and cardiovascular protection.

Natural Gut Cleanser

By encouraging bile flow and supporting regular bowel movements, EVOO also acts as a natural detoxifier. It helps eliminate waste products and supports a balanced gut microbiome.

Practical Tips

Extra virgin olive oil should be used daily, with attention to quality—look for cold-pressed oils made from Italian or certified olives.

Use it raw on vegetables, soups, grains, and legumes to enhance vitamin absorption and provide antioxidants, which are essential for keeping your metabolism youthful.

In cooking, use EVOO to sauté or finish dishes—it boosts liver and bile function, aiding digestion.

There’s no need to restrict its use for calorie reasons if your diet is balanced. The right amount depends on your individual needs, but avoiding or drastically reducing it—especially over long periods—is counterproductive.

EVOO isn’t the enemy of a fit body; it’s a metabolic activator. When used wisely as part of your daily diet, it helps regulate appetite, support liver detoxification, promote gut health, and prevent cardiovascular disease.

Cutting it out for the sake of aesthetics or calorie-counting means losing a powerful ally for overall well-being.

At the heart of the Mediterranean diet lies a food that science unequivocally recognizes as a powerful ally for healthy aging: extra virgin olive oil. Packed with bioactive compounds, EVO doesn’t just nourish the body—it communicates directly with our genes, influencing key processes that affect both the quality and length of life.

High-quality EVO supports successful aging, promotes gut health, regulates metabolism, and plays a preventive role against chronic diseases. Its benefits go far beyond its flavor or calorie content.

EVO and Your DNA: A Conversation Between Nutrition and Genes

One of the most groundbreaking aspects of EVOO lies in nutrigenomics—the science that studies how nutrients influence gene expression.

The polyphenols found in EVOO—such as oleuropein, tyrosol, and hydroxytyrosol—activate longevity-associated genes like SIRT1, which are involved in cellular repair and metabolic regulation. In simple terms, EVOO helps cells renew themselves, stay youthful, and function better for longer.

Natural Antioxidants That Combat Aging and Inflammation

Aging accelerates due to oxidative stress and chronic inflammation—two processes that gradually damage cells. The bioactive compounds in EVO act as natural antioxidants and anti-inflammatories, neutralizing free radicals and reducing systemic inflammatory markers.

Several studies have shown that regular consumption of EVO can lower levels of CRP (C-reactive protein) and IL-6 (interleukin-6), two inflammation-related markers linked to numerous chronic conditions.

And the good news? You can combat inflammation at every meal simply by adding high-quality EVO. Thanks to its rich content of active compounds—especially polyphenols—it also nourishes beneficial gut bacteria and promotes microbial diversity. A healthy gut microbiome is crucial for immune function, hormonal balance, and even mental health—three pillars of a long and healthy life.

EVO and Nutrient Absorption: Enhancing the Power of Your Diet

Some essential nutrients—like vitamins A, E, and K2, as well as cancer-fighting phytonutrients—are fat-soluble, meaning they require dietary fat for proper absorption. EVOO acts as the ideal carrier, helping these nutrients reach your cells, while also slowing sugar absorption.

Here are some functional combinations:

Pan-cooked broccoli with EVO: Enhances the bioavailability of protective compounds like sulforaphane.

Carrot and arugula salad with EVO: Boosts absorption of carotenoids.

Bread with EVO: Helps stabilize blood sugar and insulin levels, reducing post-meal glucose spikes and associated inflammation triggers.

The only real risk? cutting evo for the sake of calories.

Many weight-loss diets reduce fat intake to cut calories, but eliminating EVO is a mistake. Doing so deprives the body and metabolism of a vital regulatory agent. Extra virgin olive oil isn’t just a flavorful dressing—it’s a biological modulator with documented effects on longevity. It supports cellular health, balances the gut microbiome, and regulates inflammation and metabolism.

Incorporating EVO into your daily diet is a simple yet powerful habit—one that nurtures your body today and safeguards your health for the future.

Key Scientific Sources

Extracts from studies published in Nutrients, The American Journal of Clinical Nutrition, Cell Metabolism

EFSA review on the health benefits of EVOO polyphenols (EU Regulation 432/2012)
